Another good book is “Cereal Grass – What’s in it for you!” by Ronald L. Seibold, M.S.

In the Toronto, ON area, Evergreen is involved in “Streams Health and Wholeness Centre.”

Evergreen does everything possible to maintain the quality of the juice, but it does pass through several hands before it gets to you. The trays of juice are frozen upside down, so that the frozen cube is touching the lidding. If the juice melted somewhere in transit, the cube would fall into the bottom of the tray, so it makes it easy to tell if there was any melting. Note that sometimes, there may be a bit of brown on the lidding, from where the plastic lidding was sealed to the tray and briefly activated the enzymes. It’s just like a slight bruise on a banana which activated the enzymes.

Some store freezers have a defrost mechanism on the bottom that heats up. We strongly advise that stores do not place it on the bottom of the freezer. If you think you have received a box that has melted, please return it to the store for refund.

The average person can take 2 – 4 cubes daily. People in health crisis, can take up to a box a day.

It is preferable to have your juice first thing in the morning on an empty stomach. If it is too late in the evening, the oxygen content, may keep you awake.

There are many different ways you can prepare your juice.

One of the easiest and quickest ways is to cut out how many cubes you want, and then float the unopened cubes in warm tap water in the sink. By shaking it in the water, it will melt fast. Take it out while there is still a bit of ice in it, so it is still cold. Peel back the lidding and pour it in a glass and drink it straight.

Another way is to remove the cubes and let them melt in a glass of water. This is good if you are not in hurry - you can then sip it as it continues to melt. Yes, it does dilute the juice, but that doesn't matter, because you are still getting all the nutrients.

You can also add it in smoothies, especially if you don’t like the taste.

However if you prepare the juice, once melted drink immediately. If you let it get warm, it will turn brown and oxidize.

Evergreen had chosen to produce only fresh frozen wheatgrass juice in order to retain the highest level of raw chlorophyll.

There is a very good company called PINES that produces an excellent powder. They can be found at www.wheatgrass.com

Although cats are carnivores, they instinctively chew and eat grasses and the tender leaves of small plants to obtain the vitamins, minerals and live enzymes they need.

Outdoor cats have the advantage of catching some "live" food to supplement their diet. The raw meat in birds, rodents and bugs contain enzymes, which is important for digestion and immune system. Most pets now are housebound, and don't get enough sunshine, exercise or variety of diet. Most live off of dried and canned food which is dead food. Destruction of houseplants is one way for cats to send a message that they want some live food.

Wheatgrass juice can extend you cat's healthy life by strengthening the immune system, and helping your pet combat the effects of chemicals found in every home. When your cat grooms its fur it also ingests cleaning agents, floor polish, carpet cleaners, solvents and other chemicals. Then there's that indigestible fur ball (if the cat is a hunter, add indigestible rodent fur bones or feathers); wheatgrass helps eliminate foreign matter; preventing disease-forming bacteria from gathering in the digestive tract.

Wheatgrass provides these important benefits:
• healthy skin and shinier coats
• shedding of hair is reduced
• strengthens feline immune system
• cold nose (this is a good thing)
• improved energy levels
• bad breath is reduce because of chlorophyll
• normal bowel movements
• reduced chewing of house plants

Try mixing a cube of wheatgrass juice in with your cat's wet food. You may be surprised how fast it disappears.

Evergreen uses a special chiller that chills the fresh juice to 35°F in 1 ½ minutes. This preserves the quality of the nutrients during packaging; then it is frozen. Analysis of the product after freezing shows that all nutrients are preserved, including the chlorophyll.

There are two difficulties with fresh indoor grown grass. Many who use this grass do not realize that it has not reached its full nutritional potential. Indoor grass grows quickly in 7 - 10 days in warm conditions. The plant has a relatively high level of simple sugars. These sugars have not been converted into complex carbohydrates, vitamins, enzymes, and proteins. This explains the quick burst of energy that users sometimes experience right after drinking the juice.

The headaches and nausea that often come after drinking this 'fresh juice' is not the body detoxifying, but a reaction to mold on the trays. Some of the seed doesn't germinate and rots - causing mold. The roots of the good plants absorb that mold and consequently can cause these reactions (and often bitter aftertaste).

After extensive research and experimentation, the optimum wheatgrass was produced by growing it outdoors in its natural climate. Evergreen's wheatgrass grown outside is superior in it's nutritional content and does not have the mold problem.

Wheatgrass is the first stage of the same plant that eventually grows into the grain we use in bread and baked goods. Since we catch it in the first stage, it doesn't contain gluten (a protein found in the grains of wheat, barley and rye). At this stage, it is a vegetable - not a grain: it doesn't contain gluten. This means it is a safe food, even for those with wheat allergies. At this time, when it looks like common grass, it is harvested, juiced, and frozen.
